For the Beef Crispitos:
- 1 lb ground beef (we ground our own)
- 4– 12 inch flour tortillas, cut in half
- 1/2 red onion, diced
- 4 tablespoons ground beef seasoning (see below)
- 1 bunch of cilantro
- 1/2 cup Cotija cheese
- 1 tablespoon grapeseed oil
For the Sour Cream Sauce
- 3/4 cup sour cream
- Juice of 1 lime
- 3 tablespoons fresh cilantro, chopped
- 4 tablespoons cumin
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 oz tequila
For the Ground Beef Seasoning (refrigerate leftovers)
- 1 tablespoon chili powder
- 2 tablespoons cumin
- 1 tablespoon smoked paprika
- 2 teaspoons onion powder
- 2 teaspoons garlic powder
- 2 teaspoons dried cilantro
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 teaspoon white pepper
Instructions
- Combine all of the ingredients for the beef seasoning in a bowl and stir to combine. Set aside until it is time to use in the recipe. You can store your leftovers of this in the fridge.
- Combine all the ingredients for the cilantro lime dipping sauce. Taste and adjust the salt and pepper based on your taste buds. Set aside. This will be for dipping your beef crispitos.
- Take your 4- 12 inch flour tortillas and cut them in half down the center. Set aside
- In a cast iron skillet over medium heat add your grapeseed oil and allow it to come to temperature. Add your ground beef, diced red onion, and beef seasoning. Using a wooden spoon break up the beef while you cook it. about 5-7 minutes. Transfer the cooked beef to a bowl.
- Lay out one of the halves of tortillas that you cut on a cutting board. On the straight edge, place a thin layer of beef, and top with your cheese.
- To roll the tortilla fold in both sides toward the center and then roll the flat edge toward the rounded edge. Keep the end of the roll on the bottom to keep them sealed.
- Over medium heat in your cast iron skillet that you used for the ground beef add your crispitos seam side down and allow to brown for 2-3 minutes. Flip and repeat.
- Serve these on a plate with your tequila dipping sauce and enjoy!
