This recipe for easy spicy Chipotle Chicken Tacos in Adobo Sauce is sure to make everyone in your household happy when Taco Tuesday rolls around! While these chipotles are a bit spicy they aren’t so spicy that you can’t make this for the whole family to enjoy. We make our own Chipotles in Adobo sauce using our homemade chili powder, and it is by far cheaper and tastier than what you get in the cans at the grocery store. This is not to be confused with adobo seasoning which is a whole different thing! This doesn’t mean you can’t use the cans but here are our recipes for both just in case you’d like to try them out!

You can change the meat in this recipe!
Do not feel obligated to use boneless skinless chicken thighs in this recipe. You can substitute chicken breasts, shredded chicken, just boneless chicken thighs, or even beef.
We also love corn tortillas with our tacos but you can feel free to also use flour tortillas for this easy recipe.
You can also change the taco toppings on these to what you prefer! We have used shredded cheese, sour cream, a simple salsa, avocado slices, or even avocado mash. If you want the best taco experience we suggest our tequila lime crema and some pickled red onions.

You are going to need a cast iron skillet, tongs, a cutting board, and a shallow dish for this recipe. When I said these were easy I meant it! All of your flavor is going to come from your chipotle chiles and adobo sauce. The chilis have a deep smoky flavor to them, and the adobo sauce is full of flavors like garlic powder, cumin powder, onion powder, black pepper, cayenne pepper, and chipotle powder which are all blended in a food processor to make your adobo marinade. If you are using grocery store chipotles in adobo sauce you can water them down a bit with water or chicken broth to make them more like a marinade.
If you would like to add a little more flavor feel free to use olive oil instead of vegetable oil but keep in mind that olive oil has a lower smoke point and may not be great above medium-high heat in a cast iron skillet.
Cooking your Chipotle Chicken Tacos
We always use a cast iron skillet but you can feel free to make this in your instant pot, pressure cooker, or slow cooker. This easy chicken taco recipe would be great to meal prep in advance for a week’s worth of healthy food. You can store your leftover chicken in an airtight container in your fridge for up to 3 days! We always serve ours with a side of yellow rice, Cuban black beans, and of course some Mezcal!

Description
The perfect recipe for taco night that uses corn tortillas and a bit of spice!
Ingredients
- 1lb boneless skinless chicken thighs
- 1 cup of homemade chipotle peppers adobo sauce, peppers chopped (or one can of chipotles in adobo sauce mixed with 1/2 cup water)
- Drizzle of neutral oil (we used vegetable)
- 6–8 small corn tortillas
- 1/4 chopped cilantro for topping
- 1/4 pickled red onions for topping
- 2 tablespoons of our tequila lime crema (see gringos tacos recipe)
Instructions
- In a shallow dish add one layer of chicken thighs.
- Add your chipotle peppers and adobo sauce to the shallow dish and make sure to cover the chicken thighs. Let this marinade for at least 20 mins to overnight.
- Heat a cast iron skillet over medium heat. When hot add a drizzle of neutral oil to the cast iron skillet and add your chicken thighs making sure not to crowd the pan. Allow them to cook on each side for 7-8 minutes or until they easily lift from the skillet.
- Remove the chicken from the skillet and set aside to rest.
- After about 10 minutes cut the chicken into bite-sized pieces.
- Add a dollop of tequila lime crema to a small corn tortilla, your chopped chicken, cilantro, and pickled red onion. Enjoy!
